I found the fix for this. The Survivalist enchant was automatically cooking your fish on catch, and mcMMO only awarded XP for the raw variants by default. I updated our mcMMO config to include Cooked Cod and Cooked Salmon as valid fishing XP sources, matching the same values as their raw...
